Pear Tree Court chef cooks up a storm in national competition

Pear Tree Court is celebrating after it was announced that a team member has reached the final round of a Chef of the Year competition.  

Stuart Passey, head chef at Pear Tree Court, competed against the culinary talents of chefs from around the country to be in with a chance of winning the coveted title in Care UK’s national competition.

To secure his place as a finalist, Stuart was challenged to prepare a two-course lunch for four people in 90 minutes, ensuring that the menu would appeal to residents.

Stuart prepared a main and dessert for the judges. The first course comprised of a Lynburn cheese glazed, milk-poached smoked haddock fillet served with pancetta mash, toffee carrots, and leek and sweet pea fricassee. 

For pudding, Stuart prepared a rhubarb and custard vanilla sponge topped, with rhubarb two ways, crème patissiere and fresh raspberries. The dishes were then presented to a panel of judges which also included residents, who scored each dish based on the presentation, nutrition, use of products, taste and texture.

After being named one of four finalists, Stuart said: “The Chef of the Year competition is a skills and creativity showdown, so I’m thrilled to have made it to the final round. The dishes I prepared were two of the residents’ favourites, and I am delighted that the panel enjoyed them too.  

“My aim is to make the meals as delicious as possible here at Pear Tree Court. I love to try out new combinations and flavours that many of the residents enjoy sampling. I am looking forward to showcasing my skills in the final round.”

Ray Arnold, home manager at Pear Tree Court, added: “Every year, the Chef of the Year competition features the best chefs from around the country, and is a brilliant opportunity for chefs at Care UK to showcase their skills and expertise. Everyone here at the home is thrilled that Stuart’s talent for creating meals that both look and taste delicious has been recognised. We all have our fingers crossed that he will be just as successful in the final heat.”
